One-pot Chili sin carne

Heart-warming one pot Chili dish, perfect for Winter! The lentils and kidney beans make it high in proteins and will ensure that you stay full for a while. It is a very versatile dish; you can eat it on its own, with rice, pasta or a bake potato! For presentation, you can garnish it with fresh coriander and/or a few slices of avocado. Enjoy!

Lentils: Ideally use brown lentils. Alternatively, green lentils can also be used. Those two types hold their shapes while cooking. Do not use yellow/red lentils, they will disintegrate and give you a completely different end product.


Onion: Both red and yellow onion are fine for this recipe.


Tomato can: Try to buy a good quality tomato can as this is the main ingredient in the dish. A can of finely chopped tomatoes is best. If you end up using a can of whole tomatoes, make sure to smash them with your hands before adding to the pot.


Kidney beans: Make sure to drain the water out and rinse the beans before adding them to the pot.


Extra: In addition to the carottes, aubergine and red pepper, you can also add a can of sweet corn.

Cut the garlic and aubergine into small cubes, and slice the carottes, onion and red bell pepper.

In apot, add all your sliced and cut ingredients, followed by all the spices. Add your can tomatoes and the can kidney beans. Make sure to drain to water out and rinse the beans before adding them to the pot. Use one of the empty cans to measure half a can of water that you will add to the pot. Finally, add the brown lentils. Leave the mixture to simmer on medium heat for 40 min. At this point, your chili is ready to be served! You can add some fresh coriander to top it off!
