Soft Goat's Cheese: Any type of soft goat's cheese works for the recipe. The idea is that it can nicely melt in the spinach. If you want to make this recipe vegan, you can replace it by coconut cream or cashew cream! I would recommend the latter, it fits the best !
Mozarella: The mozarella is used to top off the dish and give it a little crispy side. Any other shredded cheese would work too. You can make this recipe vegan by replacing the cheese with breadcrumbs.
Spinach: Obvisouly fresh spinach would be ideal for the recipe, but you would need a lot of it since it reduces so much on cooking. Thus, I recommend using frozen spinach!
Cannelloni tubes: For this recipe, you need 28-30 cannelloni tubes, which is about one 250g box.
Tomato cans: The best one are the finely chopped tomato cans. However you can also used cherry tomato cans and whole plums tomato cans. Just make sure to either mix them or squeeze them while cooking.
Mix Herbs: The herbs will bring a lot of flavour to your tomato sauce. Try to prioritise rosmeary, oregano and thyme. But if you don't have them, add anything to you think will match.
On a pan, defrost your frozen spinach. Once defrosted, add the soft goat cheese, nutmeg, salt and pepper and mix. Take it off the heat.
Dice your onion and garlic gloves into small pieces and add to pan with some olive oil. After leaving them for a few minutes to cook, add your tomato cans, mix herbs, salt and pepper and leave to simmer under medium heat while to do the next step.
While your tomato sauce is simmering, you can start stuffing your cannelloni tubes the spinach mix. This amount of spinach mix should fill about 28 tubes. Once you are done filling the cannelloni tubes, place them into a cooking dish. Start preheating the oven at 180 °C.
Once your filled cannelloni are placed on the dish, pour the tomato sauce on top of them. Make sure to cover all of them ! The final step is the addition of the mozarella. Slice the mozarella and put it on top of the tomato sauce. Place the dish in the oven for 35-40 min at 180 °C.
