Ginger and garlic: Fresh ginger and fresh garlic are very important. They bring so much flavour to the broccoli side. Refer to pictures in gallery to cutting shape.
Bell peppers: Ideally you want to use two different colours of peppers; one red and one green. Make sure not to overcook them, we want to keep them crunchy!
Corn flour: Quite an important ingredient in this recipe ! It is used to coat the tofu to give it a crispy edge. It is also used to thicken the sauce. It can be replaced with flour, although this is not recommended.
Soya and Tamari sauce: Soya sauce is a fairly common ingredient in kitchen. However tamari isn't. If you don't have it, just use more soya sauce.
Apple cider vinegar: It is the best white vinegar for this recipe. But other white vinegars such as rice vinegar or white wine vinegar will also work !
Cut the broccoli into fleurets. Slices your ginger and garlic.
Cut the tofu and peppers into cubes. In a bowl or a platic bag, add 9-tablespoons of corn flour and add the cubed tofu. Mix until the tofu cubes are fully coated!
In a part under medium heat with olive, add the broccoli fleurets, ginger and garlic. Add some water for a steaming and put a lid on it. Leave to cook until broccoli has soften (but still a bit cruncky).
In a part under medium heat with olive, add cubed peppers and let them to cook until roasted. Don’t over cook them; they should not become too soft. Once this is done, set aside in a bowl the pepper cubes.
To the empty pan add more olive, followed by your coated tofu cubes. Leave to cook until the coating turn light brown. Then set aside in a bowl.
At this point you can start cooking the rice!
In a bowl (or a blender), mix the brown sugar, tomato puree, apple cider vinegar, soya sauce, tamari sauce. To it add 10 tablespoons of water and 1 tablespoon of corn flour. Mix well until fully homogeneous. Add to a pan under medium heat and let the sauce thicken. Once done, added your roast pepper and tofu to the sacue and leave it to cook for another 5 minutes.
Your meal is ready to be plated once your rice is done cooked! On a plate add in a corner rice, in another corner the broccoli and finally top with the sweet and sour tofu. Enjoy !
