One-pot Dhal

Heart-warming one pot Dhal dish, perfect for Winter! The lentils make it high in proteins and will ensure that you stay full for a while. It is a very versatile dish; you can eat it on its own, with rice, bread or even falafels! For presentation, you can garnish it with fresh coriander. Enjoy!

Lentils: Ideally use red lentils. Red lentils will desintegrate as you cook them and they will give you the ideal consistency for your dhal!

Onion: Yellow onions are best for this recipe.

Coconut can: Try not to skip it, this is what will bring it it's extra creaminess.

Curry powder: Curry powder is a mix of different spices. You can usually buy it and it is very convenient to have. Otherwise, if you have the right spices, you can make your own. You will need, coriander, cumin, pepper, chili, turmeric and ginger.

Carrottes, sweet potato and cauliflower: Those veggies fit the taste perfectly but they are not the only ones you can use. For example, butternut works well in this recipe too !

Instructions

Cut the garlic, onion, carottes, sweet potato and cauliflower into dices.

In a pan under medium heat, add the onion and garlic with some oil. Fry them for a few minutes and add the curry powder. Let it fry for another few minutes. Then add all the remaining ingredients (except the coriander). Mix well and let it simmer under medium heat without a lead for 25 min. Make sure to stir it every 10 min to avoid burning the bottom part.  After 25 min, most of the liquid should have been absord. If it is not the case, leave it for another few minutes until low heat. And voila ! It is ready to be served. The fresh coriander can be used for presentation!
