Tomato Tart

Simple, simple, simple ! This recipe is probably one of the easier. If you are busy and still want to eat a satisfying meal; this is it ! Preparation time is 5 min tops. You can easily make it vegan, just by using the right cheese.

Tomatoes: Large tomatoes are the best for this recipe. However, cherry tomatoes usually have more flavour. Feel free to use whichever according to what you have available.


Mustard: Dijon mustard, the one and only! However, you can adjust to your preference. Note: the mustard taste fades away so don't be scared to use a strongly flavoured mustard.


Pastry crust: Yes, yes of course making your own would be 10 times better. But who has the time ? This is a 5 min preparation recipe; using bought pastry crust is perfectly acceptable!


Cheese: Grated cheese is best. You can use any; cheddar, emmental, goat cheese, etc...You can also use vegan grated cheese to make this recipe vegan !

Pre-heat oven at 180 ºC. Slices your tomatoes. 

Place the pastry crust in the appropriate oven dish. Spread the mustard on the crust and place your sliced tomatoes on it.  Sprinkle the grated cheese on top.  

Place the tart in the preheated oven. Let it cook for 35 min, until edges of crust turn golden brown.

You can eat it with some lettuce and vinaigrette. If you want some extra proteins with it, this dish goes well with sausages.
