Simple, simple, simple ! This recipe is probably one of the easier. If you are busy and still want to eat a satisfying meal; this is it ! Preparation time is 10 min tops. And it requires very few ingredients!
Onions: Yellow onion is best for this recipe as we caramelize it at the beginning. Tips: To help with the caramelization process, you can add a pinch of baking powder to the onions or a little bit of water to help with the steaming process.
Eggs: This recipe calls for 8 medium size eggs. However you might need to adjust according to the size of your pan.
Slices onions, garlic, and potatoes (after peeling) into small cubes.
Whisked your eggs in a bowl.
Put a medium size pan on low heat.
In the medium size pan, caramelize the onion and garlic with a little bit of olive oil. Once the onion turns golden brown, set aside in a bowl.
Add the diced potatoes to your pan under medium heat. You can use a little bit of water to help with the steaming process. Keep the lid on until the potatoes are soft.
Add the caramelized onion mixture back into the pan with the potatoes. Pour the whisked eggs on, the potatoes should be fully covered. Let it cook under low heat with a lid on!
As the tortilla begins cooking at the edges, grab a plate while the center remains slightly runny. Position the plate over the pan and carefully invert the tortilla onto it. Then, smoothly slide it back into the pan, and let it cook for 2-3 minutes on the other side (the previously runny side). Once the eggs are cooked to your liking, it is ready to be served!
You can eat it with some lettuce and vinaigrette.
