Goat cheese: Any soft goat cheese will do!
Filo pastry: It must be filo paste to get that light crispy effect. Any other type of dough would overshadow the goat cheese.
Walnut: Those are optional. They do bright a little bit of crunch and proteins to the bricks however if you do not like them or are allegic you can skip them.
Honey: Honey brings the perfect balance to the goat cheese. You can adjust the quantity to your liking.
Rosemary: It really elevates the bricks and add some nice flavors..
Warm up your oven to 180°C / 350°F.
Set the filo pastry and cut it into thick strips.
At the top of your filo pastry strip, place the equivalent of 1 teaspoon of goat cheese. On top of the goat cheese, add a couple of leaves of rosemary, some honey, and crushed walnuts (optional).
Folding: Check the pictures below for visual support. The technique is the same as samosas folding. You fold the part with the goat cheese into a triangle, which again folds on itself. Repeat the process until you reach the other edge of the filo pastry.
Place in the oven at 180 °C / 350 °F for 30 min until golden.
