Spring salad

Perfect salad for spring with very few but coolourful ingredients! Refreshing with the tomatoes and figs but also filling and heart-warming with the mozarella and roasted courgettes!

Courgettes: Slightly roasted pan courgettes with some oil olive. Make sure you serve them hot.


Cherry tomatoes: Cherry tomatoes are usually sweeter than normal tomatoes, hence why they are preferred here. However, they can be replaced with large tomatoes too.


Figs: Must be fresh figs!


Salad: A few rocket leaves are needed for this recipe.


Mozarella: The best is buffala mozarella; it just melts in your mouth.

Ingredients

Instructions

Slices your courgettes and figs. Cut in half your cherry tomatoes.

In a pan under medium heat with oil olive, add your sliced courgettes. Roast them until golden brown.

On a plate, place your rocket leaves topped with the buffala mozarella in the center. Around it layer alternatively your roasted courgettes, cherry tomatoes and figs. Season with salt, pepper and a drizzle of olive oil and balsamic blaze. Enjoy!
