This soup recipe was created by my sister Juliette. It is a very simple but very tasteful soup. You will have it ready to serve in 15 min ! Best eaten with a piece of grilled bread on the side.
Tips and tricks on ingredients:
Carrots and Sweet potato: There are only two ingredients for this soup. There are cheap and available in any shop. Both ingredients are high in beta carotene, which is a great precusor for Vitamin A.
Ginger: Fresh ginger is optional, but it brings a real little kick to the soup ! It is highly recommended !
Coconut cream: You can make your soup extra creamy by adding some coconut cream. Once again, this ingredient is optional.
Pepper: I personally like to crack a lot of black pepper on this soup. The combination is delicious !
Cut your carrots and sweet potato into small cubes. The smaller the cubes, the faster they will cook.
Add your carrots, sweet potato, and fresh ginger (optional) to a pot with 450 mL of water. Cook with a lid on for 15 min. Once the carottes and sweet potato are soft blend until smooth. At this point, you can add more water if desired. Add some salt.
Once blended, your soup is ready to be served. Top it with some coconut cream and grinded pepper. Voila ! It is ready to be served !
